Plum and Passionfruit Ice Cream Recipe

PLUM AND PASSIONFRUIT ICE CREAM (SERVES 4–6)

METHOD:
1. Slice the fresh passionfruits into half and remove the seeds. Reserve the seeds.
2. Into a pot, add Allswell Healthier Choice Plum and Passionfruit drink and castor sugar and bring to a boil until the liquid thickens and the volume reduces down to a quarter of the original amount. Set aside.
3. Next, in a clean pot, bring the milk and thickened cream to a boil for five minutes and combine this with the Plum and Passionfruit drink mixture. Stir well.
4. Remove from the heat and stir in the egg yolks, one at a time. Give a good stir and transfer back to the stove on low heat. Stir continuously to prevent the eggs from curdling. Keep stirring for a further 10 minutes until a custard-like texture forms.
5. Strain the mixture into a bowl and add in the passionfruit seeds. Whisk the mixture for another 10 minutes.
6. Pour the mixture into an ice cream maker (if available) or a container and place it in the freezer for at least six hours to set before serving.

INGREDIENTS:
2 Passionfruits
250ml Allswell Plum and Passionfruit Less Sugar drink [Healthier Choice]
1 tsp Castor sugar
1 cup Milk
1½ cup Thickened cream
3 Egg yolks
