Recipe: Plum Cured Salmon

Inspired by Allswell Plum

PLUM CURED SALMON

Chef's tip: This can be served cured or pan-seared for a better flavour.

Cured Salmon

Ingredients:

(i) 150g Fresh Salmon Fillet, skin removed

(ii) 4 tbsp Allswell Plum drink

(iii) 3 Star Anise

(iv) 1 stick Cinnamon

(v) 1 Chinese Yellow Plum

(vi) 1 tbsp Sugar

(vii) 1 tsp Salt

Method:

1. Combine ingredients (ii) - (vii) to a smooth mix. Coat salmon fillet (pat-dried) with mix and cure overnight in chiller.

2. To use - Rinse off mix , pat dry and serve/cook.

Plum Dressing

Ingredients:

  • 1 bottle Allswell Plum drink
  • 1 pc Bentong Ginger, skin removed
  • 1 pc Prune
  • 1 dash White Vinegar
  • 1 tsp Sugar

Method:

1. Progress ingredients to fine pulp,reduce until thick over fire.

Chill to use.
